It’s Friday and time for another edition of TGIF! This week I’ve got a Peach & Honey Ginger Moscow Mule with your name on it. This cocktail is a twist on one of my all-time winter favourites – the moscow mule. There’s something about ginger beer and vodka together that is divine; the spice cancels the harsh taste of vodka, and you’re left with a delightful cocktail sure to warm anybody. Come summer, adding peaches and honey to mix makes the most sense.

I was in HomeSense last week and stumbled across a Ginger & Honey bar mix that had looked like ti would be the perfect base for a cocktail. I’ve seen a lot of cocktails floating around Pinterest with peaches, so I married everything together with vodka, and bam! Peach & Honey Ginger Moscow Mules.

- Ginger & Honey cocktail mix
- Ginger beer & fresh honey
- Vodka of choice (I like Titos but used some left over Smirnoff for this one)
- Fresh peaches
- Copper mugs – chilled
- Simple syrup
Step 1: Halve a peach and then cut it into quarters. Muddle it along with 1tsp of simple syrup in the bottom of your copper mug.
Step 2: Pack the copper mug with ice cubes – you want your mug to be cold.
Step 3: Measure 2oz of Ginger & Honey mix OR add 1 tbsp of honey to the mug.
Step 4: Add 1-2oz. of vodka (it depends how strong you want it) to the mug.
Step 5: If you you’re using the mix, add gingerale to the brim. Otherwise add ginger beer to top up the mug.
Step 6: Garnish with a slice of fresh peach, a straw and a drizzle of honey.
