Raspberry Mimosa Easter Egg Cocktail

Y’all Easter weekend is upon us. If you’re spending it with family or in-laws, that means a cocktail or two are in order, because ya know – family. Since there’s no spirit or beverage that really screams EASTER! (short of chocolate flavoured liqueur) I thought I’d go for something I saw on Style Me Pretty, but with my own little twist and substitution. I’m using Raspberries instead of blackberries, and I’m not incorporating them in the cooking of the simple sauce.

This is a sweet cocktail, so if you’re diabetic – maybe pass?

Easter brunch is a tradition around here, so it's only natural that we have a signature drink to go with it! Grab the recipe for a Raspberry Mimosa Easter Egg Cocktail that is sure to delight adults and kids alike (there's a non-alcoholic variation too).

Also, as another side-note, this recipe calls for malted easter eggs. If you do include them, make sure you eat them first because the more they disintegrate from the carbonation, the more it looks like a hot mess. Trust.

What you’ll need for a Raspberry Mimosa Easter Egg Cocktail

  • Simple syrup
  • Raspberries
  • Champagne – you could use Ginger Ale for a virgin version if the kids want one.
  • Chocolate malted easter eggs
  • Shaker + whisk

How to prepare a Raspberry Mimosa Easter Egg Cocktail

The base of the beverage is the raspberry simple sauce. It’s the tart that will balance the sweet, and amplify the champagne. Start by combining your simple syrup and raspberries in a shaker, and then muddle until the mixture is sufficiently emulsified.

As a note, you can strain it before using it if you don’t want any of the seeds, but like pulp, it’s entirely personal preference.

Before adding the raspberry simple sauce to the glasses, add a few malted easter eggs. Although I made the cocktail with them, once I got around to serving them, I was doubting myself. As I mentioned above, if you don’t kinda gobble ’em up once served, they start to fall apart and make the drink look a little funky. It tastes fine, but the visuals aren’t strong.

Add an ounce of the raspberry simple syrup to your glass – eggs and all! Shake it about, maybe try and coat the sides of the glass so that when the champagne hits, it can really penetrate the syrup and take on those flavours. It wouldn’t be a raspberry mimosa easter egg cocktail, without the raspberries eh?!

Top up your glasses with champagne! Like regular mimosas, don’t skimp 😉 Be generous! treat yo self! Be a #kween for the day, you deserve it.

Ingredients

  • Simple syrup
  • Raspberries
  • Champagne 
  • Chocolate malted easter eggs
  • Shaker + whisk

Instructions

  1. Combine your simple syrup and raspberries in a shaker.
  2. Muddle until the mixture is sufficiently emulsified.
  3. Add a few malted easter eggs. 
  4. Add an ounce of the raspberry simple syrup to your glass.
