The Best Lobster Rolls

Who doesn’t like lobster? smothered in butter, with a little tang and some crunch? These are honestly the best lobster rolls I’ve ever had, and I make them every day when situations allow.

Have you ever made a meal out of a picnic basket on a balcony? I have. While on vacation in  Martha’s Vineyard during our road trip  Dan and I indulged in one of our summer favourites – Lobster Rolls. Although most people enjoy this one sooner in the season, we had been saving ours for the end of summer when a delicious meal, full of the flavours and colours of the season, would help extend the feeling of warm nights and long sunsets just a bit longer.

It’s a good thing we chose to make ours while in the Vineyard because I got a really good price for the lobster meat! I turned the whole event in a balcony picnic at our Airbnb and we had an adorable date night in the process.

Lobster Roll Recipes

A while ago I was perusing the Homesense website  and stumbled across their  Canada 150 Recipe section . I was a little surprised to find recipes on there, not gonna lie, but I thought it was mighty good timing to stumble across a recipe for Lobster Rolls while I was prepping for our vacation. I took a quick trip to our local store to stock-up on some must-haves before the trip. Would you believe me if I told you that our local HomeSense actually carries some gourmet food items that I can’t find locally? Like Truffle infused salt for starters, but they’ve got a whole selection of goodies and I’ll save those for another post.

My picnic basket collection was enhanced by an enamelware bowl that I had originally purchased to melt butter in (for a larger lobster meal), but it served as a handy mixing bowl while prepping the rolls. Although HomeSense has a recipe for lobster rolls on their site, I took theirs and modified it slightly to fit my circumstances at the time.

The Best Lobster Roll Recipe

Ingredients

1/4 cup (80 mL) mayonnaise
1 tbsp (30 mL) lemon juice
1/2 lb (500 g) lobster meat in bite-sized pieces
1 stalk celery, finely diced
Pinch of truffle salt salt –> available at HomeSense
2 soft rolls, preferably top-split
Celery leaves to garnish (optional)S
Sea Salt Chips –> available at HomeSense

Shred the lobster meat so that it’s in bite-sized pieces, or looks like pulled pork i.e torn about and easily separated.

Thinly slice a celery stalk, you don’t want it too big! If you wanted to add shallots or garlic at the HomeSense recipe suggest, this is where you would chop those as well.

In a medium bowl, combine the mayonnaise, lobster and celery. Season to taste with salt and pepper.

Once all the ingredients are folded into themselves, squeeze half a lemon over the mixture and give it one more turn of the wrist.

 

Divide lobster mixture between buns; garnish each with a few celery leaves if you like. Serve straight away with a handful of potato chips.

And there you have it! One heck of a dinner full of simple ingredients cooked well. There’s nothing more perfect for a summer night than lobster rolls enjoyed with the one you love – an idillic setting and a beautiful picnic basket are just the cherry on top.

Easy Lobster Rolls

Make a delicious dinner full of simple ingredients with this easy recipe for lobster rolls.

Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 1/4 cup (8o mL) mayonnaise
  • 1 tbsp (30 mL) lemon juice
  • 1/2 lb (500 g) lobster meat in bite-sized pieces
  • 1 stalk celery, finely diced
  • Pinch of truffle salt salt --> available at HomeSense
  • 2 soft rolls, preferably top-split
  • Celery leaves to garnish (optional)
  • Sea Salt Chips --> available at HomeSense

Instructions

    1. Shred the lobster meat in bite-sized pieces.
    2. Thinly slice a celery stalk.
    3. In a medium bowl, combine the mayonnaise, lobster and celery.
    4. Season to taste with salt and pepper.
    5. Squeeze half a lemon over the mixture. 
    6. Divide lobster mixture between buns.
    7. Garnish each with a few celery leaves if you like.
